American Style Banana Pecan Pancakes

Makes 8 pancakes || Serves 2 || 269 kcal per serving || 32.1g carbs, 21.3g protein, 5.8g fat

Ingredients 

  • 50g oat flour
  • 30g protein powder (we used Sun Warrior Classic Vanilla)
  • 1 tbsp coconut flour 
  • 1 banana 
  • 1 egg
  • 1 egg white 
  • 1 - 2 tbsp almond milk 
  • 1.5 tsp baking powder 
  • 2 heaped tbsp greek yoghurt (use coconut yoghurt to make dairy free)
  • 40g pecans 

Place all ingredients in a blender (except pecans) and blend until smooth and well combined. Crush pecans into pieces and add to blender - mix with a spatula. Heat a pan with coconut oil (we use VitaCoco Coconut Oil) and pour 1/8 of your mixture into the pan. Cook for a few minutes each side until golden brown and cooked through. Serve with streaky bacon, extra crushed pecans and as much Zero Maple Syrup as you can handle!
