Over the past couple of months, I've been trying out some products from the (extensive) MuscleFood range. I had a stack of chicken breasts from them in the freezer so was on the look out for easy recipes in which I could use them up and came across this one for peanut butter chicken.
- 1 garlic clove
- 1/2 inch fresh ginger
- 1 tbsp honey (or agave)
- 1 tbsp soy sauce (or I used coconut aminos)
- 3 tbsp peanut butter (I used Hi-PRO)
- zest of 1/2 lime
- juice of 1/2 lime
- 1 tbsp curry powder
- 100ml coconut milk
Blend all of the above ingredients (except coconut milk) together until smooth. Cut your chicken (I used 3 sizeable chicken breasts) into 1 - 1.5 inch chunks and marinade in 1/3 of the peanut butter sauce. Grill chicken (can use skewers for ease of turning) for 8-10 minutes (or until desired - I like my chicken well cooked), turning regularly.
I served my peanut butter chicken on a bed of organic sweet potato and buckwheat noodles. Mix the remaining satay sauce with the coconut milk, warm on the stove or in the microwave and drizzle over your noodles and chicken.
